Foods are often frozen in peak season and peak condition before travelling long distances to store and as such have less time for nutrients to deplete.

Frozen ingredients such as fruit, veg, meat and fish retain the same or more nutrients, folates, anti-oxidants than fresh foods, when fresh-frozen. 

Why Microwave?

it is better for the environment and quicker cook times mean that nutritional integrity is better retained in microwaved food.

Microwaving is another process that has perpetually bad press, often associated with melted film and disfigured plastic food trays. However, more recently there has been much written on the virtues of microwave cooking….

Not only is microwave cooking thought to be quicker and cheaper but it is better for the environment as it uses less energy. Quicker cook times also mean that nutritional integrity is better retained in microwaved food than say, boiling.
